Vanilice (The Little Vanilla Cookies) with Raspberry Spread

The official name for these raspberry filled cookies is Vanilice (meaning ‘little vanilla), it’s a Serbian raspberry vanilla cookie recipe.


  • 500 g (17.64 oz) flour

  • 100g (3.53 oz) coconut flour

  • 250 g (8.82 oz) lard

  • 5 tablespoons sugar

  • 1 whole egg 

  • 1 egg yolk

  • 2 bags vanilla sugar (9 g x 2 or 0.32 oz x 2)

  • 3 - 4 tablespoons powdered sugar



  1. Whisk the lard, sugar, vanilla sugar, whole egg and egg yolk. 

  2. Add the flour and whisk until dough forms well. 

  3. Preheat the oven on 200 degrees. Place the dough on a work surface dusted with flour and roll it out. Use the two different shapes of cookie cutters, one round and other floral. Cut into small circles and then into one half of it make floral shape inside. Place them on the cookie sheets. Put them in the preheated oven for about 10 minutes and take them out before they start turning slightly brown.

  4. Let the cookies cool down for about 30 minutes. Make sure your cookies are cooled and then take round cookie, put a raspberry spread on it and top with round cookie with floral shape inside.

  5. Carefully sprinkle them with powdered sugar (make sure that sugar does not fall into raspberry spread in the middle of cookie).  

  6. Ready to serve it!
